However, researchers claim this newly developed method could massively scale up production with yields of up to eighty- five per cent. The team admit that there are still many steps required to get the process from lab to commercial production. Though sweetened treats make up a significant proportion of the bakery and confectionery sector, savoury snacks continue to be highly profitable. Veganism has moved well beyond a market niche into a major industry in its own right but, conversely, this hasn’t led to a decline in the amount of meat being consumer. Rather, consumption of meat is on the rise. 2018, for example, saw a record amount of beef, pork and poultry eaten in the US, while the Chinese were found to be eating more meat than ever before. This is a trend we can see replicated on store shelves, where meat snacks have continued to gain more space. Driven partly by diets including Paleo and by consumers searching for high protein on-the-go foods, meat snacks such as jerky can be easily found from supermarkets to petrol stations. Unsurprisingly, this has, in turn, spawned vegan alternatives with plant-based jerky enjoying its own slice of the market share, though this seems unlikely to undermine the growing popularity of meat snacks with new additions to the west such as dried fish skins and insect bars gaining traction. If there’s one thing that unites all the different markets within the bakery and confectionary sector, its innovation. Partly driven by controversies in the supply chain, partly by health concerns and partly embodying the adage of “innovate or die”, manufacturers continue to develop exciting new products, break new ground and help to circumvent some of the most pressing issues facing the industry.
