But it is not just a matter of healthy diet, locally and naturally sourced ingredients help creating that connection between products and people and give consumers the impression there is a heart-felt story behind their food. The more they know about a product, the more they connect with it and that adds value to the indulgence experience. Food colours manufacturers have been developing naturally sourced colours, derived by fruit, vegetables, roots and minerals, and experimenting with how to use them in order to obtain different colours and shades. The food colouring industry has been growing significantly; it was estimated to be worth 4.3 billion USD in 2021 and, with new companies and new technologies rising on a regular basis, the market’s worth is predicted to grow even further. Another challenge bakery and confectionary manufacturers have been dealing with is social media. The rise of social media platforms focusing exclusively on images and looks has found an easy ally in aesthetically pleasing baked goods, to the point of “instragrammable” being a key quality in the development and design of new products. The new year can often mark a switch in suppliers for food and drink companies. Where some might be hesitant to make a change, perhaps due to loyalty or simply a desire to avoid any potential complexity of the process, others are keen to embrace the new, maybe in search of higher quality raw ingredients, a machinery provider who takes more time to understand the company to offer something truly bespoke, or a supplier with better communication. The increased demand from consumers for more environmentally friendly and ethical products, and a heightened sense of responsibility being felt by companies, is one force behind switches being made, simultaneously boosting CSR credentials. Many brands are trying for example to achieve more sustainable sourcing, such as by cutting deforestation from their supply chains and choosing to gather ingredients from those with regenerative farming practices, and are looking for suppliers who can accommodate this, and be supported to become, or are already leaders in sustainable practices. As consumers place their trust in brands more carefully, one must ensure a strict chain of custody when sourcing ingredients, in order to know exactly where they come from. A supplier who is able to connect well into your document trail is key, so you can illustrate where a product has originated and the hands it has passed through to achieve transparency, compliance, and accountability. If your suppliers are not able to make themselves available when needed, cannot guarantee they will offer the quality and safety required or present the documentation to prove it, it might be time to seek a new partner. Moreover as governments encourage healthier food choices and consumers become more health- conscious, a new supplier may be required where reformulating to accommodate this - for instance when looking to find ways of reducing and replacing sugar and salt in products. Creating a high-quality end product is reliant on having good suppliers.
