< Previous40 Food & Drink International www.fdiforum.net MEAT, POULTRY AND SEAFOOD Jason Webb succeeds father to take on Managing Director role at ETI Jason Webb has been appointed as the new Managing Director at Electronic Temperature Instruments (ETI), the digital thermometer manufacturer and exporter of electronic thermometers and temperature probes. Jason, who previously held the role of operations director, succeeds his father Peter Webb, who co-founded the company in 1983 with his wife Miriam, and held the role of Managing Director for 38- years. Peter will now take on the role of chairman at ETI. The idea of ETI began in Peter’s garden shed. Fast forward to 2022 and its flagship product, the Thermapen One, is used by some of the food industry’s most renowned chefs and Michelin starred restaurants, including Buckingham Palace. The company also makes industrial thermometers for some of the harshest working environments, and wireless data loggers which can monitor and record temperatures in storage and transport facilities and relay it in real-time. Since its foundation, Peter has been awarded an MBE from the Queen for services to business, and ETI has also been presented with four Queen’s Awards, most recently in 2018 for the Queen’s Award for Enterprise for Innovation. Sustainability, however, is something that should be viewed as an opportunity for businesses in the industry, to display how they are reducing their effect on the environment for the benefit of the world and to attract and keep customers. Companies are setting ambitious goals, investing in projects to measure carbon footprint, looking into carbon neutral products, avoiding antibiotics, displaying high welfare standards, using renewable energy in processing, and altering their transport methods, for example in the seafood sector exploring hybrid fuel technology on vessels or employing lower weight gear, and using sea rather than air freight transportation. Munters is a global leader in innovative, energy-efficient, and sustainable climate solutions for customers in industries where controlling temperature and humidity is mission- critical, such as in meat processing. Our solutions reduce customers’ climate and environmental impact through lower resource consumption, and in the process contribute to cleaner air, higher efficiency, and reduced carbon emissions. How do condensation and humidity affect meat processing? Are there any significant implications? Meat processing requires strict hygiene to ensure product quality and food safety, and regulatory compliance is critical and stringently enforced. With this, scheduled shutdowns are necessary to accommodate cleaning and sanitation cycles. Large amounts of water are used by meat processing facilities for hygiene processes and while nearly all water is drained away, some moisture remains in the air and condenses on surfaces. Furthermore, condensation occurs in meat plants where warm, humid air comes into contact with cooler surfaces, like those in cutting rooms, chiller and freezer rooms, further processing rooms, and packaging rooms. Personnel must manually wipe, clean, and disinfect all impacted surfaces - a labour intensive, time consuming and dangerous task. Condensation forms on equipment, floors, ceilings, and walls, leading to potential food contamination affecting product quality. Condensation can be a breeding ground for mould growth, viruses and bacteria, and meat is the food source considered to be at the highest risk from microbial growth. The impact of condensation and humidity can be significant, not only for HACCP but for several reasons. Condensation can lead to equipment malfunctions, worker safety is compromised, and bacteria can grow. This can result in unplanned or unnecessary downtime, shutdowns, lost revenue, and increased maintenance costs. To overcome these issues, what can meat processors do? Condensation control is an important aspect of meat processing facility design and operation. Reduction of moisture in the air will lower the dew point, help prevent condensation and reduce the potential for microorganism growth. Temperature control alone is not enough, as some microbes can survive extreme temperatures. Humidity control, below 50% relative humidity, will stop all microbial growth and reduce lipid envelope virus transmission. An additional advantage of such a low humidity is that maintenance of buildings and equipment is required less frequently and materials and (electronic) equipment wear less quickly. It is also much more pleasant for people to work in a drier atmosphere. Sanitation, temperature control and optimized Munters dehumidification will keep bacteria, and mould away. Research by the University of Paris Est, France, has shown that dehumidification is essential in order to avoid condensation and stop the microbial growth. Washdowns/cleaning and disinfecting are not sufficient. In many instances, dehumidification can be twice as effective when compared to cleaning alone. In situations where wash down processes still take place, the Munters system can dry the building quickly, allowing the process to start again on schedule. Since then, the visibility has been increased to 15 meters! Russia’s first trade fair to cover the entire beverage production chain will take place from 29 to 31 March 2022 in Pavilion 57 at the VDNH Exhibition Centre in Moscow. The organisers have made use of the period since the pandemic-induced special edition of Beviale Moscow in 2021 to fine-tune the concept. To reinforce the integrated approach, there will be a stronger focus on wine and liquid dairy products in 2022. However, beer, soft drinks and beverage packaging will also continue to be key components. “After the successful event in 2021, which had been adapted to suit the circumstances, and based on current feedback from the market, I am confident that we can get back onto our previous growth trajectory with Beviale Moscow,” says project manager Thimo Holst. More than half of the exhibition space has already been booked, among others by KHS, Pentair and Fermentis. The VDNH exhibition complex is one of the most popular public spaces in Moscow. Thanks to its location in the historic part of the city, proximity to the city centre and attractive infrastructure, it also offers the ideal conditions for Beviale Moscow 2022, especially as it will take place in Pavilion 57, which was renovated and modernised in 2015. The organisers took the responsible decision to move the venue again in good time after it became apparent that the City of Moscow might continue to use the Sokolniki venue for a while. “To retain the necessary control over the entire organisation and create planning certainty for us and our customers, we have made what is in my view the best choice for a successful event,” says Thimo Holst about the change of location. “The VDNH venue meets all the criteria for a successful trade fair. Pavilion 57 allows us to substantially increase the exhibition space, the number of exhibitors, and the comfort of the conference area.” Spotlight on winemaking and dairy products Since July 2020, a new law, whose provisions include stricter regulation of grape cultivation and the processing, organisation and distribution of Russian wine, has governed the Russian wine market. The intention is to promote high-quality winemaking within the Russian Federation. The result of this law is that there has been an enormous increase in demand for products across the winemaking process chain.
