Ingredients spotlight16 As the world is faced with new pressures, the food ingredients market shifts in subtle ways – from the war in Ukraine to the continued rise of functional ingredients, and Government schemes to tackle obesity. Transport and logistics20 Rising fuel costs and staff shortages have put the haulage industry in an impossible situation – are alternative fuel sources the only way out? End of line packaging24 End of line packaging is arguably the most important part of the process, and one that many companies must get right on the first try. Mixing and blending 30 Mixing and blending are responsible for everything from texturizing and emulsification to incorporating powders, flakes and pellets into food products. Yet selecting the right option is paramount for process optimisation. The cross-sectoral initiative pursues the goal of gaining scientifically based insights together, in order to make the Swiss dairy industry more competitive and sustainable with respect to climate protection and resource efficiency. With a tailored mix of measures, the aim is to reduce greenhouse gas emissions from agricultural milk production by 20% on average. The initiative is supported by the Federal Office for Agriculture (FOAG) and will include around 300 agricultural pilot operations. The School of Agricultural, Forest and Food Sciences at Bern University of Applied Sciences (HAFL) and ETH Zurich will be supporting the project as scientific partners. “KlimaStaR Milk” aims to create a common basis for a more sustainable, resource-saving and land-appropriate Swiss dairy industry and thus position it for long-term success. 4 Food & Drink International www.fdiforum.net news Leading bakery manufacturer chooses Elis for workwear rental, laundry and maintenance Leading bakery manufacturer, Finsbury Food Group, has chosen Elis to supply and launder workwear for all seven of its UK bakeries, which employ over 3,000 staff across the UK. Elis has worked with several Finsbury bakeries for over a decade, with some initially purchasing their own workwear. Now all seven bakeries have moved to an agreement in which Elis supplies the workwear on a rental basis and, in addition to providing a laundry service, extends the life of the garments by undertaking any essential maintenance. Comments Chris Chandler, Senior Group Buyer at Finsbury Food Group: “Moving all sites to the Elis rental contract for workwear laundry has helped us to ensure that we always have the right level of garments and has brought additional business benefits and transparency. Elis provides us with regular bespoke reporting, to deliver efficiencies and ensure that garments are being rotated through the laundry to maximize their life. Elis has also been extremely supportive, for example in being able to increase quantities when our production levels rose during the pandemic.” Elis has supplied the Finsbury Food Group bakeries with its Food Safety certified workwear, with most using a pool stock of garments, while others choose to have named wearers and a locker put- away service. Elis also supplies, launders and maintains protective workwear for the company’s engineers. In total, Elis is supplying over 25,000 garments. With a schedule to suit each site, Elis collects used garments, launders and maintains them, before returning the items to the individual sites. Elis operates HACCP Hycare industrial laundries throughout the UK. They meet the strict hygiene and control requirements of the food industry and, in addition, utilise further food safety procedures, including spike allergen testing. For more information visit www.uk.elis.com The right lubricant In such a highly regulated and competitive market as food and beverage production, success demands maximum productivity. Machine operators must choose the correct type of lubricant to withstand typical operating conditions found in meat processing plants, such as excess heat, humidity and water, as well as adopt best lubrication practices. Using the incorrect lubricant can necessitate the early replacement or repair of equipment, or at worst cause sudden failure to a machine, thus ceasing operations. Lubricants have to be able to withstand the demanding conditions while maximising equipment performance, efficiency and productivity. To this end, synthetic lubricants offer a better solution than mineral oils, which often compromise some functionality and quality aspects in order to comply with food safety regulations. Anderol BV, the European producer of Anderol® products is a wholly owned subsidiary of German specialty chemicals company LANXESS. Anderol® high performance synthetic food grade lubricants are certified by NSF H1 registration, ISO 9001, ISO 21469, Kosher and Halal. The move could boost the availability of rHDPE on the market by 1560 tonnes per annum. Unlike fully recyclable plastic milk bottles, coloured milk caps cannot currently be recycled back into food grade packaging. Introducing clear caps enables retention of the material for reuse within the food sector. With higher demand for rHDPE than supply, by keeping the material within a ‘closed loop’ system, there can be more rHDPE available on the market, further reducing dependency on ‘virgin’ plastic. Research conducted by Müller, which buys a fifth of all milk produced on Britain’s farms, shows that consumers support the change, if it further improves the availability of food grade recycled plastic material. 6 Food & Drink International www.fdiforum.net news Key role for equipment in meeting plant- based demand Plant-based proteins continue to make the headlines. The ‘Alternative Proteins: Consumer Survey’ by the Food Standards Agency (FSA) is just one of many reports that demonstrate the potential of this market. An essential part of this process is the equipment available to produce such products. One of the biggest challenges in creating plant- based options is how to replicate textures that we associate with meat. Interfood Technology supply solutions for both meat and meat-free products so have extensive experience in meeting the challenges. A good example is the production of vegan ‘chicken’ nuggets. Simon Jubb is Manager of Interfood’s Preparation Division and comments, “a typical line solution for nuggets might involve a vacuum mixer, a former, a batter applicator, a breading unit, a fryer and a spiral freezer. The Alco former that we supply has shaping plates individually designed according to specific needs, thereby ensuring an aesthetically pleasing result. After all, as the old saying goes, ‘we eat with our eyes’.” For more information visit www.interfoodtechnology.com Food industry must move faster to deliver meaningful farm animal welfare impacts The tenth annual Business Benchmark on Farm Animal Welfare (BBFAW) report has revealed that while companies continue to invest in animal welfare, they are too slow in delivering meaningful welfare impacts on the ground. BBFAW – the global measure of policy commitment, performance and disclosure on animal welfare in food companies – is designed to help drive higher farm animal welfare standards in the world’s leading food businesses and provide a benchmark to inform investor choices. The 2021 report reveals that of the 150 companies evaluated: 134 (89%) now acknowledge farm animal welfare as a business issue (compared to 71% of the 68 companies evaluated in 2012); 122 companies (81%) have formal policies on farm animal welfare (compared to 46% of companies in 2012); 119 companies (79%) have published formal objectives and targets for animal welfare (compared to 26% of companies in 2012). Despite these positive outcomes, the new BBFAW Impact Rating introduced in 2021 shows that the implementation of animal welfare improvements continues to lag policies and governance. The Scottish Government has set up the Food Security and Supply Taskforce jointly with industry. It will be co- chaired by Cabinet Secretary for Rural Affairs and Islands, Mairi Gougeon and Chief Executive of Scotland Food & Drink, James Withers. Drawing on technical and scientific knowledge and expertise from across a range of sectors, agencies and organisations, the taskforce will include key food and drink industry leaders and will meet frequently over the coming weeks. James Withers said: “The establishment of this taskforce is a welcome and an important step. The immediate focus from the war in Ukraine is on the humanitarian fallout. However, it is also critical that we assess urgently the potential impact of the conflict on national food security and supply. From wheat and barley to sunflower oil, Ukraine and the surrounding region is a major player in terms of global food supply and agricultural production.” 8 Food & Drink International www.fdiforum.net news Paulig to sell Gold&Green brand, intellectual property, and R&D function to Valio Paulig has entered into an agreement to sell its Gold&Green brand, intellectual property and R&D function to the Finnish dairy and food company Valio.
