Although some manufacturers might be able tolimit their fillings to individual factories, for instance producingcheese and onion in a single factory, many manufacturers don’thave that freedom. When dealing with different recipes thatcontain different meats, there can be a real risk of cross-contamination, particularly when changing what is beingproduced on an automated line. It’s important that staff areaware of the risks of this, and perhaps even more importantthat manufacturers have some level of traceability in place, toidentify where things went wrong if there is a problem or aproduct recall. In the unfavourable situation that a problem is found,supermarkets are forced to make an instant response, andusually will only give a supplier a few hours to identify whatcaused the issue so that the retailer can make an accuratestatement to the media. Being unable to meet these deadlinescan often mean an immediate termination of any long-termcontract with the retailer. As such, traceability and qualityassurance must go hand-in-hand in order to minimise the riskwherever possible. The market has become a more complicated one in the lastfew years, but the sandwich and snack industry has only becomemore lucrative, even if the rules have changed a little.
