Food & Drink International 5www.fdiforum.netSipsmith specifies steam from Fulton fortraditional still systemSipsmith is an independent distillery that, usingthe first copper still to launch in London for almost200 years, crafts truly artisanal gins and vodkas ofuncompromising quality. It gives female names to itsstills and the first two, Prudence and Patience, originally used electricity to power elements in thesteam jackets. However, when the third still,Constance, was considered, it became clear that amore efficient heating method was required, so thecompany approached Fulton. As Fulton’s Doug Howarth explains: “While electric can be quite efficient, it only heats the waterrequired for the jackets, so is not as manageable or controllable as steam-based systems. Sipsmiththerefore wanted to install a gas-fired system for its new premises and, with advice, ordered aFulton 20J vertical boiler and ancillaries. Fulton also provided assistance and technical supportthroughout installation and commissioning.”Looking to the future, Sipsmith’s Felix James says: “With the Fulton boiler only being used toraise steam at 0.7 bar for the process, there is plenty of scope for expansion when the time comesto increase production capacity.”New BlueTherm®IR Infrared Non-Contact Wireless Thermometer Eliminating the need for wires and connectors which often cause manytraditional probes to break or fail, the new non-contact wireless BlueThermInfrared thermometer probe measures surface temperatures in a widevariety of applications, transmitting temperature data to your Android,Windows CE mobile, iOS or Bluetooth® wireless device via a secureconnection. The solid belt is particularly useful for large delicate products such asking scallops, which deform easily, and flat fish as it prevents any head-to-tail U shapes. Extruded seafood, particularly scampi, can be re-formed andre-shaped into scampi-shaped nuggets before being coated and fried.
