The first reason why the UK is seeing a bakery boom is that businesses are commonly and cleverly combining their bakeries with a coffee shop. In fact, research suggests that 40% of consumers are more likely to buy a pastry to accompany a hot drink. With a return to office-based working, people love a break from the office hustle and bustle in a warm, calming, and aromatic environment. Ultimately, people often come for the coffee, and stay for the bakery. The latest research anticipates that the bakery and sandwich market will grow by 12.9% in 2022, with big brands such as Greggs seeing the largest increase. This underpins the findings that the combination of bakeries with a coffee shop is a tour de force in this market. Yet, independent bakeries are still expected to grow by 25.3% this year, increasing their value to £1.6bn. Once again, this is likely due to increased footfall within city centres, as well as increased offerings on delivery services. With companies such as Deliveroo and Just Eat making a push to include more local businesses on their listings, this is a prime opportunity for artisanal retailers to make their mark in this space. In the Bakery Market Report, published by British Baker, Costa topped the list of the 75 most successful out-of-home bakery operators, having grown 9.2% year on year. Greggs took the second spot, with a growth of 9.6%. From this research, experts have identified the top two methodologies for bakery growth. Firstly, baked goods and confectionery are seen as lower cost luxuries for the everyday consumer. With the cost of living crisis set to hit everyone hard over the winter, the occasional splurge on baked goods may be one of the few luxuries people can justify. The second takeaway is the availability of these businesses to the consumer. Targeting travel hubs and local businesses mean that they are able to easily pick up passing trade. From this, some solutions emerge. Bakeries can begin to market their products as affordable luxuries and the opportunity to take a well-deserved break during hard times, or the busy working day. This would be especially effective when combined with artisanal products and a calming, sit-in environment. Secondly, creating and maintaining local relationships could foster a sense of community and loyalty, which keeps the customers coming back. A way of doing this could be to offer a lunchtime service to local businesses, wherein a selection of products is sent round for office workers to purchase. Yet it’s not all plain sailing. Lotus Bakeries, of Lotus Biscoff fame, has stated that it has encountered an “unprecedented” increase of costs, in the face of the Ukraine War and the UK cost of living crisis. The extraordinary increase in baking materials such as butter and cocoa powder has forced businesses to pass on the cost to the consumer, with baked and confectionery goods experiencing a cost increase of up to 6%. Some smaller businesses are increasing their made to order offerings, afraid of putting out goods that no one will buy. Despite these challenges however, Lotus Bakeries have reported a revenue growth of 14.1% from April 2021 – April 2022. It largely attributes this growth to the continued success of the Biscoff range (which is often a product sold to coffee houses, hotel chains, and other commercial outlets for further consumer reach) and the expansion of its natural food range. This is a gap in the market yet to be developed, as 42% of consumers are looking for healthier options for baked goods, and many are after viable options for Vegans. The March Hare Bakery is a small business, which focuses on creating fun, quirky, delicious macarons for everyone that officially opened its doors late 2020. The founders, the husband-and-wife team Vincent and Callie, have worked in the hospitality industry for their entire careers. Vincent started as an apprentice pastry chef at the age of 16 and has spent three decades working in high end Michelin star establishments, experimenting with various flavour combinations from around the world. Callie has worked within the commercial side of hotels since the young age of 18. Starting as a kitchen table business from their country cottage in the Mid- Wales Hills, a year and a half later the business had rapidly grown. The March Hare Bakery moved into their own commercial unit and building with their very own kitchen!
