< Previous20 Food & Drink Internationalwww.fdiforum.netCOMMERCIAL CLEANING & HYGIENENo longer can a producer justifystopping production for an extensiveperiod because equipment has becomebunged up with produce or workingconditions have deteriorated, nor canmany afford the potentially large finesbreaches of legislation can bring about. It’s now a given that all productionareas need to be able to withstandrigorous cleaning regimes to maintainexcellent hygiene standards and allbuilding products need a long lifeexpectancy to reduce cost and shutdowntime for maintenance. This could meanfewer moving parts, ensuring as littleproduct gets into cracks and crevices aspossible, or it could mean a change in thematerials used to construct the items. One example of the latter is HBM’slatest PW29 load cell series, which aremade of high-quality chrome nickel steeland conform to the IP68/IP69K degree ofprotection to ensure they performaccurately in extreme environmentalconditions. The typical applications forthese are platform scales of up to 800x800mm as the load cells can be used inconstantly damp environments – a majorbenefit for many food and drinkmanufacturers – and easily cleaned usingsteam cleaners. There are other benefits, too – the loadcells are designed with an accuracy classC3MR up to a Y-value of 15000 and comewith an NMI test certificate and OIMLconformity certificate to confirm theirhigh accuracy and suitability for use inverifiable scales. Various commerciallyavailable cable protection systems can alsobe mounted on the integrated threadadaptor which ensures they can performin very demanding conditions. It’s not just the machinery where thequality of the materials used can make adifference. Flooring in a food and drinkproduction environment needs to be easyto maintain. As well as being easy toclean, to avoid stickiness and slippiness, increasingly there are requirements forchemical resistance, as well the floor beingstrong enough to withstand heavymachinery. Increasingly too, companiesnow wish to make sure their floors areapproved as a food safe product withmajor names such as Campden BRI.One example of this in place is atA cleanbreakThe importance of minimising downtime has led to manycompanies reviewing their cleaning and hygiene policiesHardware such asSANIMotor’s gearmotorsmeet the IP69K extremewashdown rating establishedby the European IEC forequipment exposed to theuse of harsh cleaning agents20-23:Layout 1 20/9/13 13:56 Page 1COMMERCIAL CLEANING & HYGIENESmithfield Market, whoneeded a floor suitable for anAnimal By-Products storagearea. The specification wascritical and they opted to useResuthane TG69 from ResinServices. Due to the large amount ofmeat waste generated at the market eachday it was necessary to develop a specific area to dispose ofanimal by-products efficiently and safely, which present a risk tohuman and animal health. Hence the main requirements werefor this low temperature area to be steam cleanable to maintainhygiene with an anti-slip surface.Once insulation panels and stainless steel perimeter curbs werefitted throughout, the existing worn concrete floor needed to beprepared. Mechanical scabbling was also required – a form ofsurface preparation which removes a thin layer of concrete toremove any surface contamination ready for the installation of anew system. It alsoprovides a matt, textured surface that is seamless andhas good anti-slip properties – ensuring potential safetyproblems are also dealt with effectively.Other flooring solutions have numerous benefits inthe food and drink industry and there is a huge array tochoose from. Some now including the ability towithstand lactic acid, which is of particular value todairies. One other useful addition is the Polygiene additive, asilver-ion based antimicrobial treatment, which is placed withinthe resinous flooring material. This enables the floor coating tocontrol up to 99.9% of all bacteria landing on the surface ofthe floor, giving an ideal platform to support the stringenthygiene requirements of modern processing environments. It’s not surprising, given that the need for exceptionalhygiene is so great, that companies now increasingly contractout their cleaning requirements to specialist companies. Thesecompanies will usually have all the right certification and arevery experienced in the cleaning of food manufacturingenvironments, which aren’t always the easiest to operate in.Their talents also means that there generally isn’t arequirement to close down production while the cleaning iscarried out, which is an unrealistic requirement for manymanufacturers. Working closely with specialist cleaning teams,it’s now easier than ever to move process areas around toaccommodate the cleaning and a flexible approach means theyare able to work around continual production to complete thejob, without any interruption or risk to employee safety. There are numerous other schemes and accreditationsystems to ensure cleanliness reaches a high standard andmuch hardware is now created with the needs of cleaning inmind. One particularly valuable requirement in the food anddrink industry is the IP69K extreme washdown ratingestablished by the European IEC for equipment exposed totemperature extremes, constantly wet environments and theuse of harsh cleaning agents. Hardware such as SANIMotor’sgearmotors meet this requirement, while electrical componentsIt’s notsurprising, giventhat the need forexceptional hygiene isso great, that companiesnow increasinglycontract out theircleaning requirementsto specialistcompanies20-23:Layout 1 20/9/13 13:56 Page 3Food & Drink International 23www.fdiforum.netCOMMERCIAL CLEANING & HYGIENERSL puts a spring inthe step for KingsdownKingsdown Water, natural spring water suppliers, recently extended their state of the art stainless steelproduction facility by adding a new bottling line.RSL were asked tospecify a resin floor forthe area. The main brieffor the project was aheavy duty flooringsolution which providedchemical resistance, wasable to withstand theload of heavy machineryand was easy to clean –which is critical in drinkproductionenvironments.Resuthane SL23 waschosen as the idealsolution for this project. The water-basedpolyurethane self-smoothing resin floorscreed is part of the award-winning Resuthane range. Approved byCampden BRI as a food safe product, Resuthane is used by majorbrands including Pepsi, Coca-Cola and Schweppes. Resuthane SL23provides a seamless floor which is hard wearing, chemical resistant, easy to clean and non-dusting.Recycling waste water in food and drink manufactureenvironments not only boosts environmental credentials butincreases efficiency. Kingsdown are committed to protecting theenvironment and wanted to ensure that all production waste fromtheir bottling plants is recycled. Resuthane SL23 is easily laid to fallsto incorporate drainage channels and grids creating an efficientdrainage system throughout the plant. Resuthane SL23 was applied in Kingfisher blue – a vibrant andstriking blue which complements Kingsdown’s corporate colours andbrightens up the bottling plant. The result is a vibrant highlyfunctional floor that is easy to clean, supports an efficient drainagesystem and enhances the production environment. The client was extremely pleased and confident that Resuthanewill stand the test of time, proving to be a very worthwhileinvestment and successful addition to their state of the art bottlingplant. For more information on RSL’s solutions, call 0161 483 1232or visit www.resinsurfaces.co.uk.areencapsulatedin thermallyconductiveepoxy resin, allowing use atup to 40°C ambienttemperature.Sometimes it’s the actualequipment used to clean that cancreate valuable cost savings. SealedAir’s Diversey, for example, have recently launched the newmachine dishwashing detergent Suma Combi which comes witha built-in rinse aid. Because a separate rinse aid is not needed,Suma Combi simplifies the dishwashing process, saves space inthe kitchen and reduces packaging waste. Most facilities with industrial dishwashers still use separateauto-dosed detergents and rinse aids, but the new approachsimplifies the process so that food service organisations canachieve consistent cleaning results with a single, convenient, combined product. Because separate rinse aid is no longernecessary, Suma Combi also eliminates the risk of running outof the essential drying agent and ensures users have bettervisibility and control over costs. A further benefit is that itallows facilities to store and manage fewer chemicals.Cleanliness has to be a top priority in food preparationenvironments and new technology and the high standards ofspecialists in this area will ensure customers enjoy peace ofmind.HBM’s latest PW29 load cellseries conform to theIP68/IP69K degree ofprotection to ensure theyperform accurately in extremeenvironmental conditions20-23:Layout 1 20/9/13 13:56 Page 4Let us do thetalking…www.fdiforum.net the voice of the Food and Drink industryINTERNATIONALFood&DrinkFood&Drink24:Layout 1 20/9/13 13:28 Page 1Food & Drink International 25www.fdiforum.netLABORATORY SHOWCASEThe professional food testing approach from ILSILS has the enviable reputation of being one of the finest equipped and most professional food contractlaboratory testing facilities in Europe. With legislation over the dischargecontent from production plants becomingtighter, it is wise to treat waste water toreduce the negative effect this has on bothcosts and the environment in general. Chemical dosing is one of the mosteffective methods of water treatment anddifferent authorities, particularly in the UK,even demand water discharged from suchplants is addressed in planning applications. To ensure that even if production increases, companies are thinking about treatmentbefore they even start production. The onus is undoubtedly on quality ofproduct in food and drink manufacturing andit is no small wonder that innovationcontinues within the treatment sector. Astechnology moves on so to do standards, meaning that at the moment, legislation isbeing met head-on by those who invest.Getting steamySaving water or reusing it can obviouslyhave knock-on effects. Thanks to looking atsteam boiler systems at its factory, DairyCrest recently reduced gas consumption by18%. Dairy Crest Engineering Manager GordonDavies says, “Our engineers are mainly taskedwith core activities like keeping theproduction lines running. In our busymanufacturing environment, some of thesteam system jobs are pretty low on our day-to-day priority list so we decided to ask SpiraxSarco to do a full audit. We worked inpartnership with them on therecommendations and together we met ourstretched energy targets for the past twoyears.”One of the big improvements was raisingthe temperature in the boiler feed tank, frombetween 79 and 82°C, to 96°C. As a rule ofthumb, increasing the temperature of the feedto a boiler by 6°C reduces the boiler’s energyconsumption by 1%, so this alone will haveyielded savings of at least 2%. Condensate recovery was another area thatproduced big results, raising the proportion ofhot, treated water recycled back to the boilerfrom 76% to between 94 and 95%.PHOTO: SHUTTERSTOCK.COM/PHOTOBEGINNERSectors of the industrywhich use more water thanothers like brewing need tobe canny with their wasteWater, watereverywhereBut how to deal with it once it’s been used? Companies are turning tosustainability methods to retain the use of water down to the last possible drop.26-27:Layout 1 20/9/13 14:11 Page 1WATER TREATMENTFood & Drink International 27www.fdiforum.netIn addition, the steam system audit highlighted a variety of other energysaving measures, such as repairing and installing insulation, improving the blowdown control on the boiler and repairing or replacing any malfunctioning steamtraps. Savings to be madeThanks to a recent agreement, food and drink businesses have saved £2.2million by reducing their water consumption. The voluntary agreement, theFederation House Commitment run by WRAP, aimed at helping food anddrink manufacturers reduce their water consumption, also delivered savings of1.5 million in the last year. The 16.1% reduction in water use has been achieved through activities suchas water reuse, improved efficiency in cleaning operations and innovations inwater using products like taps. The whole industry target is set to reduce waterconsumption of 20% by 2020 and the actions of signatories under the FHC aregoing a long way to help meet that target. The amount of water saved between2007 and 2012 is 7.4 million, this could fill nearly three thousand Olympic-sizeswimming pools. There are now 71 active signatories across 294 sites signed up to theagreement, including members of Dairy UK, who became an official partner in2012. Dr Richard Swannell, Director, WRAP, says, “It’s great news, the latestresults show that signatories are continuing to have a significant impact. Bybringing the industry together through the Federation House Commitment weare able to help achieve collective action which has seen significant financialand environmental savings. The actions of signatories are also making aconsiderable contribution towards meeting the whole industry target of 20% by2020.” Andrew Kuyk, Director of Sustainability at Food and Drink Federation says,“The Federation House Commitment is central to our efforts to help membersachieve the water savings which are vital for their businesses, for theenvironment and for the communities in which they operate. It is an excellentexample of voluntary collaboration under WRAP’s independent andauthoritative leadership and we look forward to further progress in the yearahead.” This shows that wise use of water or perhaps gearing investment towardssmart use is what companies are advised to do these days. To not invest seemsfoolish when such a premium sits on water use in an industry that perhaps usesmore than any other of its kind.Smart use of water is becomingever-more importantDairies are increasingly becomingmajor waste water recyclers, whichcan only be a good thingPHOTO: SHUTTERSTOCK.COM/DARIUSZ GORA26-27:Layout 1 20/9/13 14:11 Page 228 Food & Drink Internationalwww.fdiforum.netINVALUABLE ADVICE FROM INDUSTRY SPECIALISTSMEET THE EXPERTT: 0044 1223 243444 E: enquiries@sherwood-scienfic.com www.sherwood-scienfic.com Sherwood Scienfic Ltd, 1 The Paddocks, Cherry Hinton Road, Cambridge - CB1 8DH, UKFlame Photometers forSodium DeterminationChloride Analysersfor Salt DeterminationSherwood Scienfic Ltd is a Development andManufacturing company producing a range of scienfic instruments and apparatus with applicaons in many industries, educaon and research. For more informaon on our instruments & apparatus please contact us on...Suppliers of a comprehensive range of products to the food industry. •Ingredients•Addives•Vitamins•Colourings •Flavourings•Sweeteners•SeasoningsWe believe in giving the customer what they want, when they want it, to the specificaon and in the pack that they require, with no extra costs or hidden charges. We look forward to hearing from you...Jon & Dawn Sermon May Products Ltd, 18 Heathfield Road, Halesowen, West Midlands B63 1AD Tel: 0121 550 7872 Fax: 0121 550 1817 Email: mayproducts@btconnect.comwww.mayproducts.co.uk 28-29:Layout 1 20/9/13 14:12 Page 1Food & Drink International 29www.fdiforum.netSherwood Scientifichelp manufacturers monitor their salt contentSalt content of foods is receiving increasing attention and there is now a move towards a significant reduction in dietary salt.Monitoring sodium concentrations in food ingredients and final product is a universal requirement. As well as being delivered as part of a formal training course, it can also becarried out interactively online in the workplace.Hence the value of the Food Safety Interactive programme, developed by Creative Learning Solutions, which enables staff to gain arecognised certificate in food hygiene quickly and effectively. Initially developed for the hospitality industry, it’s now also widely used byfood manufacturers. The programme follows the RSPH Level 2 Food Safety in Catering syllabus and is endorsed by the Society of FoodHygiene and Technology. Successful completion enables caterers to demonstrate to the regulators that their staff have been trainedproperly in accordance with national standards.Creative Learning Solutions also offer courses on the Essentials of Food Hygiene and Food Nutrition and Healthy Eating.
