Solve them withSilverson Machines’ ’How to’ videoMany food products rely on thickening agents such as pectin to give products theirdesired characteristics. But incorporating pectin into a product can cause problemsduring the manufacturing process as the powder has a tendency to form lumps whenadded to water. Conventional mixers do not produce enough shear to break down these lumps, causing partially hydrated material to remain in the mix - and filtration of these poorlydispersed solutions adds to process times and costs. Silverson offers mixers capable ofdispersing a wide range of powders such as pectin.Silverson’s latest ‘How to’ video specifically on dispersing pectin, demonstrates how laboratory scale mixers up to the Flashmix powder/liquidmixer for larger volumes and higher viscosity mixes can be used to disperse pectin fully in a matter of minutes. By using a Silverson high shearmixer you can dramatically reduce processing times, improve product quality and eliminate the need to premix powders. For more information, visit www.silverson.co.uk.machinery in tip-top condition is criticalto maintain a cost-effective operation. So for companies whose machinery hasrarely seen preventative maintenance –or those with a limited budget –rebuilds can be a viable option. No matter what the machine, ingredient or end product, hygiene is atthe heart of all food manufacturing.Contamination is an ever-present threaton the production line, particularly fromcontact surfaces and from areas wherefood matter and dirt can accrue.Without a thorough washdown andsanitation process between batches, mixers and blenders can become amajor risk, transferring food ingredientsor contaminates from one batch toanother. One of the most eye-openingexamples is with scrapers, which areused predominantly when highviscosity food ingredients are mixedtogether. During this process, ingredients close to the vessel wallstend to move slower which affects theoverall efficiency of the mixing process.Scrapers are design to come intocontact with the vessel walls andscrape away sticky ingredients to beincorporated back into the mixing© Shutterstock/Itsanan42 Á38-42.qxp_Layout 1 24/09/2018 12:16 Page 442 Food & Drink Internationalwww.fdiforum.netMIXING AND BLENDINGprocess. But some particles canbecome embedded in the scraperitself, creating abrasion on thevessel walls which leads to wear.Ingredients can also collect on thescraper arm, where it cancontaminate the next batch (orbatches). Meeting the demands of today’smarket often meansmanufacturers need to upgradetheir production line. Though newor bespoke builds aren’t always aviable option, pre-used andrepurposed older models exist asa cheaper option. In either case,it’s critical that manufacturersensure they have a robust cleaningprogramme in place to preventcontamination and wear and tearof their mixing and blendingmachinery. © Shutterstock/Surasak_Photo38-42.qxp_Layout 1 24/09/2018 12:16 Page 5Food & Drink International 43www.fdiforum.netGULFOOD MANUFACTURINGHaving outperformed itself year-on-year since launching in 2014, GulfoodManufacturing will once again becategorised into five dedicated industrysectors: Ingredients Showcasing essential ingredients thatimprove taste, aroma, colour, texture, nutrition, production, storage, transportand shelf life.ProcessingCovering everything from generalcross-industry processing lines andtechnologies, to industry-specificequipment.PackagingFeaturing equipment and machineryfor packaging, printing, labeling, weighing, sorting and decorating forlarge, mid and small-scale industries.Automation & ControlsPresenting technological innovation inautomation – from robotics, smartmanufacturing and digitalisation, toIndustry 4.0 and Industrial Internet ofThings (IIOT).Supply Chain SolutionsShowcasing end-to-end solutions forthe food industry.Spanning 80,000 square meters ofexhibition space across 16 halls, thethree-day show will welcome more than1,600 local, regional and internationalsuppliers and industry service providersfrom 60 countries showcasing thelatest manufacturing businessimprovement tools.
