Batches of batter mix were prepared in fourseparate lines, using bottom-entry mixers. Batches were nothomogeneous and contained lumps which caused problems furtherdownstream including clogged nozzles in the spraying systems, filtersrequiring extensive manual cleaning and poor yield of raw materialsdue to loss through the filters.One of the cornerstones of Silverson’s success is their “try beforeyou buy” policy, where customers can use a Silverson mixer at theirown site, free of charge, to see for themselves the advantages of highshear mixing. In this case, Silverson provided an Ultramix mixer foruse in a 1000 litre mixing vessel, and assisted with its evaluation.Initial trials showed a definite improvement but there were stillsmall lumps in the mix. Silverson were convinced a completely lump-free mix could beachieved. Each batch contained water, milk powder, flour,buckwheat flour, egg yolk, sunflower oil and other flavouringingredients. After evaluation, the conclusion was the lumps mightbe caused by milk fat encapsulating the flour.Another test batch was made, changing the order of addition ofthe ingredients, dispersing the flour and buckwheat flour first. Atthis stage the mix was found to be completely smooth and lump-free.The milk powder and remaining ingredients were added and thefinished batch was perfect.As a result, the customer revised their manufacturing process inline with Silverson’s recommendations, and an Ultramix unit waspurchased for the first of the production lines. Three moreUltramixes will follow.
