Researchers from the National University of Singapore have turned tofu wheyinto an alcoholic beverage in what is believed to be a world first.Named Sachi, the beverage is made from tofu whey – a liquid that isgenerated from the production of tofu and is often discarded.The fermentation technique also enriches the drink with isoflavones, whichare antioxidants that have many health benefits, the research team said.The creation of Sachi was initiated a year ago by Associate Professor LiuShao Quan and his PhD student Chua Jian Yong.“Very little research has been done to transform tofu whey into edible foodand beverage products,” said Chua Jian Yong. “I had previously worked onalcohol fermentation during my undergraduate studies in NUS, so I decided totake up the challenge of producing an alcoholic beverage using the whey.
