Thepublic perception of dairy waxes andwanes as the media pushes and pullsthe industry in and out of the so-calledhealth halo. The dairy industry isrobust and stays afloat by adapting tomeet the changing needs of theconsumers and the food and beveragesector at large. Founded by the Food andAgriculture Organisation of the UnitedNations (FAO) in 2001, World Milk Dayfalls on June 1 each year. It extolls thevirtues of milk and its position aslifeblood in the farming industry thatsupports it. But despite thiscelebration, the industry is underincreased competition from thealterative milk market and the growingpublic hunger for free-from foods. Nowhere is this as prevalent as withthe rise of alternative milk andcheeses. What began as a nicheproduct, relegated to specialistsuppliers and stockists, and cateringto a tiny demographic, has sinceachieved a significant market share.Supermarkets have entire aisles –sometimes more – dedicated to freefrom products. For dairy, alternativeseither come from plants and nuts formilk, and soy and tofu products forcheese. However, labelling patentlynon-dairy foods as such is causingconsternation amongst the industry. It’s an argument that has heated upin Europe of late. Indeed, theEuropean Court of Justice has madehistory after ruling that namesincluding “milk” and “butter” can nolonger be used to describe soy andtofu products. Ergo, products thatpurport to take the place of dairy canno longer do so under the samelabelling and semantics. The alterativedairy industry, however, has hit back,claiming that customers are not beingmisled, as their products – and theirplant origins – are clearly stated andfreely available to consumers. Thecourt ruling has caught the industryzeitgeist, throwing fuel on a fire thathas been waging for years. The meatindustry is also at loggerheads overthe labelling of its alterativecounterparts. The free-from aisle isawash with veggie or vegan sausagesand burgers et al. Theindustry exists on a pendulum in thepublic eye and media, where itsreputation swings back and forth. Oneresearch paper might highlight thehealth benefits of cheese and milk whileanother condemns it. The most highprofile example recently is butter whichhas, particularly in the UK, enjoyed arenaissance. Despite its higher fatcontent, researchers and somenutritionists argue it is better for thebody than margarine. With consumersagain embracing butter, sales have shotup, driving the price of butter with it.Cheese is also being seen in a new lightafter it was revealed that eating cheesehas a number of positive effects for thebody, particular in conjuncture withmental health and physical fitness. Thisis ideal for the industry, as they cannow market their products to aconsumer base that increasingly prefershealthier food options, and win back ademographic that is slowly turning itsback on dairy. Part of the allure for dairy toconsumers and producers alike, is itsversatility. The UK’s Kanegrade suppliesa plethora of dairy ingredients whichhave been derived from milk. Often thisis from cow’s milk, though can alsocome from goat or other animals asspecified or required. Thoughundoubtedly the most popular milkoptions, cow’s milk is enjoying somehealthy competition as producers turntowards goat, ewe and even donkeymilk. The handling, producing and processing ofdairy products, both in their raw state andfinished forms, requires the appropriatemachinery and equipment. The productionprocess becomes more complex whenconsidering the number of techniquesproducers add into the mix. These includevitamin and mineral fortification, milk solidscontent control, salt and sugar dissolution and,of course, emulsification. Many of theaforementioned speak to the sensory profileand shelf life of a dairy product, though othersindicate consumer preferences. Reduced fat andsugar dairy will remain popular, despite thelatest findings suggesting that full fat varietiesmay, in fact, be the healthier option. Nevertheless,flavoured milks and milk shakes are notorious for theirsugar content and as more countries introduce theirown sugar taxes, it is imperative for producers to curtailthe sugars in their products. This all requires suitableequipment. In the run-up to thisyear’s event, a record 2,865 companieswere in attendance. Add to that therecord-breaking 74 per cent of visitorstravelling to the Düsseldorf-based eventfrom overseas – three quarters of whichwere decision makers – and the 2017event quickly proves its impact on theindustry. Visitors benefitted from aninternationally unrivalled multitude ofinnovations on display and a uniquemarket overview. This was also reflectedin the corresponding high scores theygave the trade fair – just under 98 percent stated in the official survey thatthey were satisfied or very satisfiedwith their visit to interpack 2017. The ongoing digitalisation ofproduction processes on the wayIndustry 4.0 applications was a toptrend on a number of stands.Production linked along these linesmakes it possible to manufacturepersonalised packaging efficiently or toguarantee traceability, to name but twooptions. Furthermore, the modulardesign of packaging machines andprocess lines and optimised digitaloperating concepts play a pivotal rolein order to reduce complexity inmanufacturing and achieve the highestdegree of flexibility possible forchanging batch sizes or productversions. The sustainability theme alsoremained “omnipresent”. Companiespresented improved resource efficiencyin terms of both the material used withever smaller wall thicknesses and ofmanufacturing processes. Here, not only the entireworkflow was digital from onlineordering to tracking and tracing, butthe machine itself was also installed inrecord time thanks to a virtual twin andthe networked planning in cooperationwith several universities.Six years after SAVE FOOD waslaunched, the initiative has grown into abroad-based alliance of over 850international members from industry,associations, NGOs and researchinstitutes. One of the milestones of theInitiative is the SAVE FOOD Congress atinterpack; its third edition held on 4 Maywas highly praised by delegates for itsbroad thematic coverage. The Congresspursued a multi-dimensional approachin order to address the issue of foodlosses and waste comprehensively. Innovationparc – the special showorganised as part of interpack 2017 –also addressed the theme of SAVEFOOD and presented very practicalsolutions for minimising food losses andwaste. These also included the finalistsand winners of the WorldStar Awardsof the World Packaging Organisation.Awards went, for instance, to plasticbags for fruit that can enormouslyprolong shelf life thanks to built-inripening-gas absorbers.The concept of “components –special trade fair by interpack”, whichhad been revised for interpack 2017,was received very well by visitors.According to the feedback receivedfrom the extremely satisfied exhibitorsthe quality of visitors was also high.
