The value of testkitchens cannot therefore be overestimatedand facilities such as Alimp’s new facility inMaastricht are making a real impact. Itenables processors seeking productivity andquality improvements to see and test thelatest systems for cooking protein, vegetableand bakery products. As Bartosz Psiuch, director of Alimp points out, “It creates ahighly promising opportunity for large andsmall processors to try out systems thathave never been seen before in Europe.”Designed and operated by Unitherm FoodSystems, the cooking and chilling systemsdemonstrated at the test kitchen include thelatest continuous systems of variouscapacities that can provide very substantialproductivity as well as dramaticallyincreased yields and other benefits for thecooking and pasteurizing of variousproducts. Examples of system capabilitiesinclude inline smoking and browning, smallfootprint “spiral” ovens, and continuouspasteurising and grilling of vegetables suchas onions and peppers. The equipment in the test kitchen isarranged in in-line configurations, so thatprocessors can experience how continuoussystems fit and work together. In addition, the systems available are available forprocessors to perform realistic trial runs oftheir products. For example, one recentvisitor test-cooked around 500kg of chickento ensure total peace of mind over thebenefits. One challenge for food and drinkmanufacturers when it comes to reviewingand implementing processing solutions isthe requirement to meet hygiene standards. The inclusion of inadequately designedprocessing equipment within processingareas is often responsible for renderingcleaning practices ineffective, thanks to afailure to eliminate bug traps, areas on thesurface of the equipment for bacteria toaccumulate, from the design of processingequipment. Companies are thereforeproviding a wide range of equipment forwhen hygienic designs are considered to bean important operational consideration. For example, Applied Weighing is able tooffer the Cleanmount II and Clevermount IIrange of loading assemblies, designed forvessel and tank weighing applications. When combined with a fully welded loadcell, the stainless steel assemblies providemaximum ingress protection, with sealingup to IP68, and are capable of withstandingregular cleaning operations using highpressure water. Applied Weighing also makeuse of wireless technology that negates theneed to locate and replace cables ininstances where they have become damaged. This can prove particularly valuable inhazardous areas.A further issue that can have an impacton machinery downtime is that of ensuringthey are effectively lubricated – both toomuch and too little can cause majorproblems in operation. Klüber areaddressing this with their automaticlubricant dispensers, which both preventsoverlubrication of components, and alsopremature wear of machine parts due tostarved lubrication, while extending32 28-33:Layout 1 22/8/14 14:54 Page 432 Food & Drink Internationalwww.fdiforum.netPROCESSING & PACKAGINGmaintenance intervals and reducing production losses.Hygiene standards can have a major impact on the choice ofprocessing and packaging equipment, with the meat productionsector having to review its production processes thanks to thisyear’s changes to the EU and UK meat hygiene regulations. Theextensive inspections that are taking place to ensure producersreach the highest standards have emphasised the importance oftraceability and coding and marking solutions are taking on avital role. Many meat processors still use analogue technology todo this but the lack of flexibility and the potential for excessivedowntime means digital technology is becoming far morecommon. As coding specialists Linx point out, using coding and markingprinters which are at least IP55 rated, and where necessary IP65rated, means they can withstand washdown from water jets, preventing the wet conditions from causing problems with thecoder itself. Fully stainless steel enclosures can also make adifference here. Having the correct IP rating can also help thecoders to continue to function in refrigerated conditions, something that is common on meat processing lines to makecertain that the produce is kept at a safe temperature. The need to ensure processing equipment is correctly sanitisedis a further importance. The Food Information toConsumers Regulation is to come into forcein 2015 and a recent survey, conducted byCampden BRI for GS1 UK, suggests around80% of companies are not prepared for thelabelling changes – but 20% only need tomake minor changes to bring their packagingin line with FIC. One challenge is likely tobe working out how labels can include all therequired information at a legible size whilestill being able to make use of existingmarketing and branding. Companies such asDenny Bros are suggesting innovations suchas their multipage labels which allows for afar greater area to include everything on alabel that is desired by both consumers andmanufacturers.Innovations in processing and packaginghave made small but significant differencesto the quality of production and the finishedproduct and those who have made changesare reporting a fast return on investment. It’s likely more deals will be carried out atthe PPMA Show as companies look for thehighest standards.Denny Bros’ multipage labels allow for a far greater area to includeeverything on a label desired by both consumers and manufacturersStevens Groupproduces creative, practical batching andlot traceabilitysolutions for foodmanufacturers28-33:Layout 1 22/8/14 14:54 Page 6Food & Drink International 35www.fdiforum.netPPMAPPMA Show demonstrates limitlessopportunitiesAs growth in the UK’s manufacturing sector continues to accelerate, industry professionals are poised toflock to this year’s PPMA Show, the UK’s premier, free-to-attend complete production line event forprocessing and packaging machinery. Now in its 27th year, the show has beenrecognised as the only UK event thatattracts hundreds of machinerymanufacturers and component suppliersacross a wide range of industries.
