A new threat is on the horizon however, as Brexit continues to cause havoc in the UK, and with current PM Boris Johnson seeming poised to push for no deal, consequences are abound for numerous industries – but none more so than the food and drink. It’s doubly bad news for fruit and vegetable aficionados, with shelves predicted to be curiously absent of many everyday staples. With the UK’s climate being inhospitable to many plants, some politicians have warned that people may well need to switch up their diets. For distributors and providers of fruit and vegetables, issues of import and supply are going to be paramount. Having a strong infrastructure will be key, but there is still the risk that certain foodstuffs will be difficult to get into the country until ties between the UK and EU are normalised, and there’s no telling how long that will take. And that’s to say nothing of changes in consumer demand making an already complicated industry more so. Certainly, while the natural approach is of huge importance to consumers, the importance of food hygiene and safety means processing is now required to ensure products are of a uniformly high standard, while minimising ecological and environmental impact and promoting sustainable living, either through fair trade or charitable initiatives. This is not as easy as many other Fresh on the shelves The fruit and vegetable market has been a staple for hundreds of years, but challenges ahead threaten serious problems, especially in the UK Holchem develops chlorine free salad, vegetable and salad washing product The effective washing of fresh cut fruit and vegetables is very important in the food processing and food service industries as there is no opportunity with salad or fruit to carry out a thermal reduction step for the control of microorganisms. Holchem has been focusing on developing chlorine free alternatives in the form of its Crystal product which is a peracetic acid-based disinfectant, low foaming and is suitable for a wide variety of vegetable, salad and fruit washing procedures. It’s an effective solution to ensuring the highest standards are maintained. Peroxyacetic acid-based disinfectants are effective against a wide spectrum of micro-organisms including vegetative and sporing bacteria, moulds, spores, yeasts and viruses. They are suitable for a wide variety of vegetable, salad and fruit washing operations and are particularly suited to automated dosing systems. It Is manufactured from hydrogen peroxide and acetic acid to form an equilibrium of peroxyacetic acid, hydrogen peroxide and acetic acid. This eventually breaks down to form water and acetic acid. Smashtag, however, downloads the data over Bluetooth to a phone or tablet. An app then sends the information to the Cloud where it is now viewable via a web console and a spreadsheet can be downloaded. Smashtag’s new web-based console supports its low-cost Bluetooth temperature logger ‘Chill’ creating a comprehensive system which allows a full range of users in the cold chain to monitor shipments quickly and easily. Managing Director Matt Sims says: “‘Chill’ launched in April 2019 and the web console is the next milestone; our Cloud technology enables us to offer our customers greater flexibility to improve their operations. If you have specific logging requirements, get in touch so we can discuss how to meet your needs. There is much more to come from Smashtag.” For more information, visit: www.smashtag.global. industries, however, as there is only a limited amount of innovation that can be undertaken when it comes to the industry. Past experiences with GM crops, or bio-engineered fruit has shown that consumers are wholly unprepared to place their faith in produce they feel has been tampered with in some way. On the contrary, at the same time this was happening, the organic movement and tag on fruit and vegetables was instead generating higher sales. For many companies one of the few realistic options is to instead focus on the efficiency of their own manufacturing process, with a view to not only reducing costs but of decreasing the amount of time produce spends in a facility. In a market where food is often judged on how fresh it is on the shelf, each additional day of downtime, be it in distribution or production, can be devastating. With wages increasing and the potential for Brexit to cut off a prime source of labour, this has to change, but there are some who fear it could already mean UK manufacturers cannot compete with their international rivals. The fruit and vegetable industry is particularly susceptible to this due to the large amount of workers they employ, and the relatively small returns on the produce itself. Where other brands can seek to diversity and invest in unique products, there is little that can be done to make one apple intrinsically better than another, other than to employ branding strategies. This is an angle some have taken, especially in efforts to boost the recognition and reputation of their brand in order to make a product seem of a higher intrinsic quality. Others are seeking to further diversify into healthy ranges and snack foods, with dried fruits or sachet-sold fruit slices. The ready meal market has boomed in recent years as a result of the busy lifestyles the everyday consumer now leads, and with healthy eating in the limelight as well, the potential is obvious. Salad ingredients, ready-made salads, fruit salads and other pre- packaged and prepared meals might be a lucrative option for some, but the trend has been around for some time, and current competition could already be quite entrenched. The fruit and vegetable market is as strong as it has ever been, but there have been challenges for many – namely in keeping up with the productivity of global competitors. As markets open up even further, investment in efficiency is likely to become an even greater concern due to a raft of new international competitors. That said, the potential and market share is there for any with the foresight to grasp it. © Shutterstock/ liza54500 52-53.qxp_Layout 1 23/09/2019 11:12 Page 2the industry. Here’s a sneak peak at one of our latest stories. A new publication from the International Dairy Federation (IDF) explores innovative solutions for wastewater treatments in dairy processing. Like all wastes produced by production plants, dairy wastewater must be treated before it is discharged into water bodies. Owing to its composition and organic matter content, biological treatments are preferred and currently, activated sludge is one of the most used processes. This treatment, completed by other unitary operations, achieves the quality levels required for the discharge. However, dairy wastewater presents further interesting possibilities. Its unique composition can support energy production and its treatment, under some conditions, allows for the recovery of water for its reuse. The new IDF publication represents a guide that professionals can consult to improve the treatment and valorisation of wastewater produced on site or identify a state-of-the- art technology in the event that a treatment plant requires replacement. The production of this guide helps deliver on the dairy sector’s commitment to the adoption of sustainable practices throughout the dairy chain, ensuring that best expertise and resources are available to the entire dairy supply chain with regard to wastewater processing and treatment options.
