IFF launches platform to drive adult beverage innovation

Global food and beverage company IFF has introduced SipScape, a digital platform aimed at supporting innovation within the adult beverage sector. The platform provides insights on product design, flavour modulation, and sweetness reduction for no- and low-alcohol drinks. It also showcases IFF’s capabilities in incorporating botanicals, natural colours, and functional ingredients to align with evolving market trends.

SipScape is informed by PANOPTIC, IFF’s proprietary trend and foresight tool, which analyses cultural and consumer behaviours. The platform identifies shifts such as the growing interest in moderation and conscious consumption among younger consumers. It also introduces five consumer personas linked to tailored beverage concepts, providing practical guidance for product development and marketing strategies.

Two examples include Eternal Explorers, representing socially conscious consumers with global perspectives, and Good-Time Gurus, younger consumers prioritising experimentation and personalised experiences. Recommended product concepts for these personas feature both alcoholic and non-alcoholic options, ranging from mezcal-based cocktails to plant-based sparkling energy drinks.

SipScape aims to support beverage brands in understanding emerging consumer needs, identifying market opportunities, and developing products that resonate with lifestyle and taste preferences.
